3 cups hardy kiwi (I quartered them and left the skin on)
1 package dry pectin (I used Sure-Jell)
1 cup unsweetened pineapple juice
4 cups sugar
Put kiwi, pectin, and pineapple juice in a saucepan and bring to a boil, stirring constantly. Add sugar, stir until disolved and return to a boil. Boil for 1 minute stirring constantly. Remove from heat and ladle into sterilized jars leaving ¼ headspace. Use two piece lids, secure tightly and process for 10 minutes in boiling water bath.

I just made a batch of this jelly using my kiwi berries (hardy kiwis) from my yard. The taste of the kiwi berries and pineapple together in this jelly is amazing. I’m so glad I came across this recipe. I had an abundance of kiwi berries this fall and was looking for a new way to preserve them. Thank you!
