Chocolate Cherry Bars

1 20 oz. can cherry pie filling
1 teaspoon almond extract
2 eggs

Mix well by hand in a large bowl. Pour in greased 10×15 pan. Bake at 350 degrees for 20 to 30 minutes.

Frosting for Chocolate Cherry Bars

1 cup sugar
5 tablespoons butter
1/3 cup milk
1 cup chocolate chips

Boil and stir together first three ingredients constantly for 1 minute, then stir in chocolate chips. Pour over warm cake, cool and then cut into bars.



Pumpkin Pie Cake

LEAD Technologies Inc. V1.01Preheat to 350 degrees

4 cups canned pumpkin
1 can evaporated milk
3/4 cup white sugar
3/4 teaspoon salt
3/4 teaspoon cloves
1 teaspoon nutmeg
3 eggs
3/4 cup brown sugar
1/2 teaspoon ginger
2 teaspoon cinnamon
1 teaspoon vanilla

Mix everything in a large bowl, beat well. Pour into 9×13 glass pan. Sprinkle 1 large yellow cake mix over top. Sprinkle 3/4 to 1 cup chopped walnuts on top. Drizzle 1 1/2 sticks of melted butter over the whole thing!

Bake 1 hour at 350 degrees

Serve with whipped cream or ice cream and enjoy!


Birthday Carrot Cake

+Melissa, Kevin, Jodi1/2 cup oil
2 cups sugar
4 eggs
Beat eggs till light in color add rest slowly

Mix in bowl:
1 teaspoon cinnamon
2 teaspoon baking powder
2 teaspoon baking soda
1 teaspoon salt
2 cups flour

Add to eggs, fold in 4 cups of carrots.

Bake at 350 degrees for 40 to 45 minutes

1 pound powdered sugar (4 cups)
1/2 cup butter
8 ounce cream cheese -teaspoon Vanilla
Raisins, walnuts or pecans


Banana Bread

1 1/2 cup sugar
4 bananas
2 eggs
1 teaspoon vanilla
2 cup flour
1 teaspoon soda
1 teaspoon salt
1/2 cup milk
1/2 broken nuts (optional)

Cream butter and sugar
Blend in bananas, eggs and vanilla
Mix in dry ingredients
Add milk
Fold in broken nuts
Pour into 2 loaf pans or 1 bundt pan
Bake at 350 degrees for 1 hour

Peach or Apple Kuchen

+Little Dollies½ c. butter or margarine
1 pkg. Yellow or white cake mix
½ c. flaked coconut
½ c. sugar
1 t. cinnamon
1 c. sour cream
2 egg yolks or 1 egg
1 large can of peaches or apples (drained very well)

Heat oven to 350 degrees. Cut butter into the “dry” cake mix until crumbly. Mix in coconut with a fork. Pat the mixture lightly into ungreased 9 x 13 pan, building up edges slightly. Bake 10 minutes. Arrange peach slices or apple slices on warm crust. Drizzle the sugar and cinnamon mixture over fruit. Blend the sour cream and egg together in a small bowl and drizzle over the fruit. Bake 25 minutes or until edges are light brown. Don’t overbake. 12 – 15 servings.

This is not a “Pretty” dessert, but OH MY! It is my kids very favorite dessert.


Zucchini Cake

1/2 cup oil
1 3/4 cup sugar
2 eggs
1 tsp vanilla
1/2 cup sour milk
2 cup grated zucchini
2 1/2 cup flour
4 Tablespoons cocoa
1/2 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon cinnamon
1/2 teaspoon cloves
1/2 cup chocolate chips

Cream shortening, oil and sugar. Add eggs and vanilla and sour milk. Beat in all dry ingredients, stir in zucchini. Put in greased and floured 9×13 inch pan. Sprinkle chocolate chips over top. Bake at 325 degrees for 40-45 minutes. Yummy!

I like to add a little less cinnamon and cloves than the recipe calls for.

This is a great way to use up the last of the zucchini when you’re sick of making zucchini bread.  My family prefers it topped with Hershey’s Fudge Frosting.
