Yummy Oatmeal Cookies

image1 1/2 cups flour

1/2 teaspoon baking soda

1 teaspoon cinnamon

1/2 teaspoon salt

1 cup sugar

1/4 cup brown sugar

1 teaspoon vanilla

1 egg

1/2 cup melted butter

1/4 cup milk

1 1/4 cup rolled oats

1/2 cup coconut

1/2 cup raisins or other dried fruit

1/2 cup chocolate chips

24 nestle chocolate melting wafers

Preheat oven to 350F. Put all ingredients in a large bowl in the order listed, setting aside the chocolate melting wafers and mix thoroughly. Arrange by tablespoons on cookies sheets, topping each dough ball with a chocolate melting wafer. Bake until the edges are brown, 10-12 minutes. Let cool on cookie sheets for two minutes before transferring cookies to clean newspaper or wire rack to continue to cool.

This is a slightly modified version of Fanny Farmer’s Oatmeal Cookies. Traditionally I’d love to load them up with nuts and raisins; however, with so many school going nut free, it’s no longer an option for my children to bring to school. Have fun and experiment with mix-ins. For example, my mother hates raisins. I’m sure she’d make these with 3/4 cup nuts and 3/4 cup chocolate chips instead of the coconut, fruit, and chocolate. My eldest daughter loves white chocolate, I’m sure she’d substitute the raisins and chocolate chips for 1 cup white chocolate chips…oooooo, or peanut butter chips. You get the idea.

These cookies bake up soft and chewy. They’re perfect for school lunches or an after school treat.
